Coffee Popsicles

This summer I’ve been trying different popsicle recipes for something a little different. One of my favorites that I just couldn’t get enough of was the coffee popsicles.

Here’s the recipe I used.

Coffee Popsicles

2 1/2 cups of strong coffee
One 14 oz. can sweetened-condensed milk, divided
3/4 cup heavy cream
1/2 tsp. vanilla extract

Blend 2/3 cup sweetened condensed milk with the hot brewed coffee. Allow coffee to cool. Fill popsicle molds 2/3 full with the coffee. Mix the heavy cream with 3 tbsp. of the sweetened condensed milk and vanilla. When popsicles are slushy in about an hour, add the cream mixture over the top of each pop until the mold is full. Add popsicle stick and return to the freezer until firm. When I took them out of the mold, I let them sit for a minute and then rolled them in chocolate sprinkles. So good.

This makes about 10 popsicles. Enjoy!
